Eating Local Week One

Week one of the Dark Days of Winter Challenge is nearing completion.

Things are awesome so far! My only issue is all this food I still need to eat in my fridge…

About a week ago I got this really painful sore in my mouth. I have no idea what it’s all about, but i’ve had a very very painful time eating (as well as talking, drinking, sleeping, etc). For the most part I have been eating smoothies, soups, and other liquids. In the evening I’ll then have a small salad with a few other things.

I have succeeded in my goal to eat at least one 95% local meal per day. I would say my diet right now is about 90% local. (Part of that is because I have no desire to take the time to go to the grocery store, so most of the food in my house is what I got at the market on Saturday.) I would post some pictures of what I’ve been eating but none of it is pretty. Just very simple, as I’ve also been busy this week preparing for mid-terms.

Breakfast has usually been a big green smoothie with a whole bunch of spinach and one bosc pear. Later I might make a juice with some of the apples kale and carrots. Then at dinner I’ve been making a big bowl of fresh crisp lettuces, steamed kale and carrots, sweet corn, with a little seaweed on top (def not local) and then some salad dressing (also not local). I also made some no-bake oatmeal cookies that aren’t local at all this week… Otherwise I eat some food at school when I’m in a pinch and occasionally at a restaurant.

my appetite hasn’t been very robust so we’ll have to see what concoctions I can come up with next week. For now I can just looking longingly at all the Macintosh apples that burn my mouth too much to eat them! :(

I have also done well in my goal to thoroughly enjoy everything that I eat. The food from the market is so fresh and lovely, it takes even the simplest meals to another level.
